  • 1 cup long-grain rice
  • 4 cups water or broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp cayenne pepper
  • 2 tbsp olive oil
  • 1 bay leaf
  • 1 smoked ham hock or sausage (optional)

Instructions

  1. Soak black-eyed peas overnight in water.
  2. In a large pot, heat olive oil over medium heat.
  3. Add onion, garlic, and green bell pepper; sauté until softened.
  4. Stir in black-eyed peas, rice, water or broth, salt, black pepper, cayenne, and bay leaf.
  5. Add ham hock or sausage if using.
  6. Bring to a boil, then reduce heat to low.
  7. Cover and simmer for 30-40 minutes until rice is cooked and peas are tender.
  8. Remove bay leaf and ham hock. Shred meat if desired and return to pot.
  9. Serve hot.

  • Use vegetable broth for a vegetarian option.
