Description
A traditional Southern dish made with black-eyed peas, rice, and seasonings.
Ingrédients

- 1 cup black-eyed peas
- 1 cup long-grain rice
- 4 cups water or broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 green bell pepper, chopped
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp cayenne pepper
- 2 tbsp olive oil
- 1 bay leaf
- 1 smoked ham hock or sausage (optional)
Instructions
- Soak black-eyed peas overnight in water.
- In a large pot, heat olive oil over medium heat.
- Add onion, garlic, and green bell pepper; sauté until softened.
- Stir in black-eyed peas, rice, water or broth, salt, black pepper, cayenne, and bay leaf.
- Add ham hock or sausage if using.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 30-40 minutes until rice is cooked and peas are tender.
- Remove bay leaf and ham hock. Shred meat if desired and return to pot.
- Serve hot.
Notes
- Adjust spices to taste.
- Use vegetable broth for a vegetarian option.
- This dish is often served on New Year’s Day for good luck.
