Description
A delicious Italian pasta salad featuring cheese tortellini and fresh vegetables.
Ingrédients

- 2 cups cheese tortellini
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, diced
- 1/2 cup black olives, sliced
- 1/2 cup mozzarella balls
- 1/4 cup fresh basil, chopped
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- Salt and pepper to taste
Instructions
- Cook the cheese tortellini according to package instructions. Drain and let cool.
- In a large bowl, combine the cherry tomatoes, cucumber, red onion, black olives, and mozzarella balls.
- Add the cooled tortellini to the bowl.
- In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
- Pour the dressing over the pasta salad and toss to combine.
- Gently fold in the fresh basil.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Feel free to add additional vegetables like bell peppers or spinach.
- This salad can be made a day in advance for better flavor.
