- 2 cups rice
- 2 1/2 cups water
- 1/4 cup soy sauce
- 1 tablespoon mirin
- 1/2 pound chicken, cut into pieces
- 1 cup vegetables (carrots, peas, and bell peppers)
- 1 tablespoon sesame oil
- 1 green onion, chopped
Instructions
- Rinse the rice under cold water until the water runs clear.
- Combine rice and water in a pot. Bring to a boil, then reduce heat and simmer for 20 minutes.
- In a separate pan, heat sesame oil over medium heat.
- Add chicken and cook until browned.
- Add vegetables and cook until tender.
- Stir in soy sauce and mirin. Cook for another 5 minutes.
- Fluff the rice and serve topped with chicken and vegetables. Garnish with green onions.
Notes
- Use short-grain rice for best results.
- Feel free to substitute chicken with tofu for a vegetarian option.
- Adjust soy sauce to taste.
