Ingrédients

  • 1/4 cup breadcrumbs
  • 1/4 cup green onions, chopped
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 tbsp sesame oil
  • 1 tbsp brown sugar
  • 1 tsp black pepper
  • 8 small corn tortillas
  • 1 cup shredded cabbage
  • 1/2 cup kimchi
  • 1/4 cup cilantro, chopped

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix beef, breadcrumbs, green onions, soy sauce, garlic, ginger, sesame oil, brown sugar, and black pepper.
  3. Form mixture into meatballs, about 1 inch in diameter.
  4. Place meatballs on a baking sheet and bake for 20 minutes.
  5. Warm tortillas in a skillet.
  6. Assemble tacos: add meatballs, cabbage, kimchi, and cilantro to tortillas.
  7. Serve immediately.

  • Adjust spice level with more or less ginger.
  • Use ground turkey for a lighter option.
