Description
A refreshing ice cream made with lavender and Earl Grey tea.
Ingrédients

- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 1 tablespoon dried culinary lavender
- 2 tablespoons Earl Grey tea leaves
- 5 large egg yolks
- 1 teaspoon vanilla extract
Instructions
- In a saucepan, heat the heavy cream and milk over medium heat until hot but not boiling.
- Add sugar, lavender, and Earl Grey tea leaves. Stir well and remove from heat.
- Let the mixture steep for 30 minutes.
- Strain the mixture to remove lavender and tea leaves.
- In a bowl, whisk egg yolks. Gradually add the warm cream mixture while whisking.
- Return the mixture to the saucepan and cook over low heat until it thickens, about 10 minutes.
- Remove from heat and stir in vanilla extract.
- Chill the mixture in the refrigerator for at least 4 hours.
- Churn in an ice cream maker according to the manufacturer’s instructions.
- Transfer to a container and freeze for at least 4 hours before serving.
Notes
- Use culinary lavender for the best flavor.
- Adjust sugar according to your taste.
- Let the ice cream sit out for a few minutes before serving for easier scooping.
