Description

A refreshing ice cream made with lavender and Earl Grey tea.


Ingrédients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 tablespoon dried culinary lavender
  • 2 tablespoons Earl Grey tea leaves
  • 5 large egg yolks
  • 1 teaspoon vanilla extract

Instructions

  1. In a saucepan, heat the heavy cream and milk over medium heat until hot but not boiling.
  2. Add sugar, lavender, and Earl Grey tea leaves. Stir well and remove from heat.
  3. Let the mixture steep for 30 minutes.
  4. Strain the mixture to remove lavender and tea leaves.
  5. In a bowl, whisk egg yolks. Gradually add the warm cream mixture while whisking.
  6. Return the mixture to the saucepan and cook over low heat until it thickens, about 10 minutes.
  7. Remove from heat and stir in vanilla extract.
  8. Chill the mixture in the refrigerator for at least 4 hours.
  9. Churn in an ice cream maker according to the manufacturer’s instructions.
  10. Transfer to a container and freeze for at least 4 hours before serving.
