- 1 ½ cups graham cracker crumbs
- ½ cup butter, melted
- 1 cup sugar
- 4 packages (8 oz each) cream cheese, softened
- 1 cup sour cream
- 2 teaspoons vanilla extract
- 4 large eggs
- 1 cup lemon juice
- 1 tablespoon lemon zest
- 4 egg whites
- ¼ teaspoon cream of tartar
Instructions
- Preheat the oven to 325°F (163°C).
- Mix graham cracker crumbs and melted butter. Press into a springform pan.
- Beat cream cheese and sugar until smooth. Add sour cream and vanilla; mix well.
- Add eggs, lemon juice, and lemon zest. Blend until fully combined.
- Pour cheesecake mixture over the crust.
- Bake for 50-60 minutes until set. Let cool.
- Whip egg whites and cream of tartar until soft peaks form.
- Add sugar gradually and whip until stiff peaks form.
- Spread meringue over cooled cheesecake.
- Bake for an additional 10-15 minutes until meringue is golden.

- Let the cheesecake cool before adding meringue.
- Store leftovers in the refrigerator.
