Description
Lemon sandwich cookies filled with strawberry frosting.
Ingrédients

- 1 cup all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 1 tablespoon lemon zest
- 1 tablespoon lemon juice
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup strawberries, pureed
- 1/2 cup butter, softened
- 2 cups powdered sugar
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, cream butter and powdered sugar.
- Add lemon zest, lemon juice, and mix well.
- In another bowl, combine flour, baking powder, and salt.
- Gradually add dry ingredients to the butter mixture.
- Roll dough into balls and place on a baking sheet.
- Bake for 10-12 minutes or until lightly golden.
- Allow cookies to cool completely.
- For frosting, beat butter and strawberry puree.
- Gradually add powdered sugar until smooth.
- Spread frosting on half of the cookies and top with remaining cookies.
Notes
- Store cookies in an airtight container.
- Use fresh strawberries for better flavor.
- Adjust sweetness of frosting to taste.
