- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 cup unsalted butter, softened
- 1 1/2 cups white sugar
- 1 egg
- 1 teaspoon vanilla extract

- Zest of 1 lemon
- 1/2 teaspoon salt
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix flour, baking soda, baking powder, and salt.
- In another bowl, cream together the butter and sugar until smooth.
- Beat in the egg, then stir in vanilla, lemon juice, and lemon zest.
- Gradually blend the dry ingredients into the creamed mixture.
- Drop dough by rounded tablespoonfuls onto ungreased cookie sheets.
- Bake for 8 to 10 minutes until edges are golden.
- Let cool on cookie sheets for a few minutes before transferring to wire racks.
Notes
- Store cookies in an airtight container.
- For a stronger lemon flavor, add more lemon zest.
- Chill the dough for an hour for a better texture.
