A refreshing dessert combining the tang of lime with the creaminess of cheesecake.

- 1 cup graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1/2 cup lime juice
- 1 tablespoon lime zest
- 1 cup heavy cream
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 325°F (160°C).
- Mix graham cracker crumbs and melted butter in a bowl.
- Press the mixture into the bottom of a springform pan.
- In a separate bowl, beat cream cheese and powdered sugar until smooth.
- Add lime juice and zest, mixing until well combined.
- In another bowl, whip heavy cream and vanilla until stiff peaks form.
- Fold the whipped cream into the cream cheese mixture.
- Pour the filling over the crust in the pan.
- Bake for 45 minutes, then cool to room temperature.
- Chill in the refrigerator for at least 4 hours before serving.
Notes
- For a stronger lime flavor, increase the lime zest.
- Serve with lime wedges for garnish.
