Description
Linzer cookies are a classic Austrian dessert made from almond or hazelnut dough and filled with fruit preserves.
Ingrédients

- 2 cups all-purpose flour
- 1 cup ground almonds or hazelnuts
- 1/2 cup powdered sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 1/2 cup fruit preserves (raspberry or apricot)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, ground nuts, powdered sugar, cinnamon, and salt.
- In another bowl, cream the butter and vanilla until smooth.
- Gradually add the dry ingredients to the butter mixture.
- Chill the dough for 30 minutes.
- Roll out the dough to 1/4 inch thickness and cut into shapes.
- Cut out centers of half the cookies for filling.
- Bake for 10-12 minutes until lightly golden.
- Let cookies cool and spread preserves on the solid cookies.
- Top with the cut-out cookies and dust with powdered sugar.
Notes
- Store in an airtight container.
- Use different fruit preserves for variety.
- For a nut-free version, substitute ground oats.
