Loaded cauliflower casserole is a low-carb alternative to traditional casseroles. It combines cauliflower with cheese, bacon, and green onions for a satisfying dish.

- 1 large head cauliflower, cut into florets
- 1 cup shredded cheddar cheese
- 1/2 cup cream cheese
- 1/4 cup sour cream
- 1/2 cup cooked bacon, crumbled
- 1/4 cup green onions, sliced
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Steam the cauliflower florets until tender, about 10 minutes.
- In a large bowl, mash the cauliflower.
- Add cream cheese, sour cream, garlic powder, salt, and pepper. Mix well.
- Stir in half of the cheddar cheese, bacon, and green onions.
- Transfer the mixture to a baking dish.
- Top with remaining cheddar cheese.
- Bake for 25-30 minutes until the cheese is bubbly and golden.
Notes
- For a spicier version, add jalapeños.
- You can substitute the bacon with turkey bacon for a lighter option.
- Store leftovers in an airtight container in the fridge for up to 3 days.
