- 1 lb grilled chicken, diced
- 2 medium sweet potatoes, cubed
- 1 cup cooked quinoa
- 1 cup black beans, rinsed
- 1 avocado, sliced
- 1 cup cherry tomatoes, halved
- 2 cups spinach
- 2 tbsp olive oil
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Toss sweet potato cubes in olive oil, paprika, salt, and pepper.
- Spread sweet potatoes on a baking sheet and roast for 25-30 minutes.
- In a bowl, layer spinach, quinoa, black beans, grilled chicken, roasted sweet potatoes, cherry tomatoes, and avocado.
- Serve immediately and enjoy.
