Delicious loaded mashed potato cakes perfect for a side dish or snack.
Ingrédients

- 2 cups mashed potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- 1/4 cup green onions, chopped
- 1/2 cup all-purpose flour
- 1 large egg
- Salt and pepper to taste
- Oil for frying
Instructions
- In a large bowl, combine mashed potatoes, cheddar cheese, bacon, and green onions.
- Add flour, egg, salt, and pepper. Mix until well combined.
- Form mixture into patties.
- Heat oil in a skillet over medium heat.
- Fry patties for 3-4 minutes on each side until golden brown.
- Remove from skillet and drain on paper towels.
Notes
- Serve warm with sour cream or your favorite dipping sauce.
- Store leftovers in the refrigerator for up to 3 days.
- Can be made ahead and frozen before frying.
