Description
A classic Louisiana dish made with red beans and rice, seasoned with spices and smoked sausage.
Ingrédients

- 1 pound red beans
- 1 medium onion, chopped
- 1 green bell pepper, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 pound smoked sausage, sliced
- 4 cups chicken broth
- 2 teaspoons Cajun seasoning
- 1 bay leaf
- Salt and pepper to taste
- 4 cups cooked white rice
Instructions
- Rinse and soak the red beans overnight.
- In a large pot, sauté onions, bell pepper, celery, and garlic until soft.
- Add the smoked sausage and cook until browned.
- Add the soaked beans, chicken broth, Cajun seasoning, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours.
- Remove the bay leaf. Serve over cooked white rice.
Notes
- For a vegetarian option, omit the sausage.
- Use leftover beans for a quick meal.
- Adjust spices to your preference.
