  • 1 lb crab meat
  • 1/2 cup vegetable oil
  • 1/2 cup all-purpose flour
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 celery stalks, chopped
  • 4 garlic cloves, minced
  • 6 cups seafood stock
  • 2 cups okra, sliced
  • 2 tsp Cajun seasoning
  • 1 tsp thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. Heat vegetable oil in a large pot over medium heat.
  2. Add flour and stir continuously to make a roux until it turns a dark brown color.
  3. Add onion, bell pepper, celery, and garlic; cook until soft.
  4. Pour in seafood stock and bring to a boil.
  5. Add okra, Cajun seasoning, thyme, bay leaves, salt, and pepper.
  6. Reduce heat and simmer for 30 minutes.
  7. Add shrimp and crab meat; cook until shrimp are pink.
  8. Serve over cooked rice.
