Ingrédients

  • 2 tbsp olive oil
  • 1 tsp oregano
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup kalamata olives, pitted and sliced
  • 1/4 cup red onion, thinly sliced
  • 2 cups mixed greens

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix olive oil, oregano, garlic powder, salt, and pepper.
  3. Add diced chicken to the bowl and coat with the mixture.
  4. Spread the chicken on a baking sheet.
  5. Bake for 20-25 minutes or until fully cooked.
  6. In a large bowl, combine cherry tomatoes, cucumber, feta, olives, and red onion.
  7. Add the baked chicken to the vegetable mixture.
  8. Serve on a bed of mixed greens.
