A delicious low carb Greek chicken bowl packed with flavor and nutrition.
Ingrédients

- 1 lb chicken breast, diced
- 2 tbsp olive oil
- 1 tsp oregano
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 cup feta cheese, crumbled
- 1/4 cup kalamata olives, pitted and sliced
- 1/4 cup red onion, thinly sliced
- 2 cups mixed greens
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, mix olive oil, oregano, garlic powder, salt, and pepper.
- Add diced chicken to the bowl and coat with the mixture.
- Spread the chicken on a baking sheet.
- Bake for 20-25 minutes or until fully cooked.
- In a large bowl, combine cherry tomatoes, cucumber, feta, olives, and red onion.
- Add the baked chicken to the vegetable mixture.
- Serve on a bed of mixed greens.
Notes
- Adjust seasoning to taste.
- Feel free to add more vegetables.
- This dish can be made in advance and stored in the refrigerator.
