Ingrédients

  • Turkey – 1 whole (12-14 lbs)
  • Olive oil – 1/4 cup
  • Garlic – 6 cloves, minced
  • Fresh rosemary – 2 tbsp, chopped
  • Fresh thyme – 2 tbsp, chopped
  • Salt – 1 tsp
  • Pepper – 1 tsp
  • Cauliflower – 2 heads, chopped
  • Butter – 1/2 cup
  • Heavy cream – 1/2 cup
  • Cheddar cheese – 1 cup, shredded

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Rub the turkey with olive oil, garlic, rosemary, thyme, salt, and pepper.
  3. Place the turkey in a roasting pan and cook for about 3 hours, or until the internal temperature reaches 165°F (74°C).
  4. Meanwhile, steam the cauliflower until tender.
  5. In a bowl, mash the cauliflower with butter and heavy cream until smooth.
  6. Stir in the cheddar cheese until melted.
  7. Serve the turkey with the cauliflower mash.

Notes

  • Let the turkey rest for 20 minutes before carving.
  • You can season the cauliflower mash to taste.
