A rich and creamy raspberry cheesecake with a luxurious pink velvet texture.
Ingrédients

- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup sugar
- 1 cup sour cream
- 3 large eggs
- 1 cup fresh raspberries
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1/4 cup raspberry puree
Instructions
- Preheat the oven to 325°F (163°C).
- Mix graham cracker crumbs and melted butter in a bowl.
- Press the mixture into the bottom of a springform pan.
- Beat cream cheese and sugar until smooth.
- Add sour cream, eggs, vanilla, and lemon juice. Mix well.
- Gently fold in fresh raspberries and raspberry puree.
- Pour the mixture over the crust in the pan.
- Bake for 55-60 minutes or until set.
- Allow to cool, then refrigerate for at least 4 hours.
- Serve chilled and enjoy.

- Use fresh raspberries for best flavor.
- Let the cheesecake cool completely before refrigerating.
- Top with additional raspberries before serving.
