Ingrédients

- 2 cups cooked quinoa
- 1 lb chicken breast, grilled and sliced
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup Kalamata olives, pitted
- 1/2 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Cook quinoa according to package instructions and let it cool.
- Grill chicken breast until cooked through. Slice into strips.
- In a large bowl, combine quinoa, chicken, cherry tomatoes, cucumber, red onion, and olives.
- In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
- Drizzle dressing over the salad and toss to combine.
- Top with feta cheese before serving.
Notes
- Can substitute chicken with chickpeas for a vegetarian option.
- Serve chilled or at room temperature.
