- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, sliced
- 1 zucchini, sliced
- 1 cup cherry tomatoes, halved
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion and garlic, sauté until soft.
- Add ground beef, cook until browned.
- Add bell pepper and zucchini, stir-fry for 5 minutes.
- Add cherry tomatoes and dried oregano, cook for another 3 minutes.
- Season with salt and pepper.
- Garnish with fresh parsley and serve.
