- 2 chicken breasts
- 1 lemon, juiced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried dill
- 1 cup cooked quinoa
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- Salt and pepper to taste
Instructions
- Marinate chicken in lemon juice, olive oil, garlic, dill, salt, and pepper for 30 minutes.
- Preheat grill or skillet over medium heat.
- Cook chicken for 6-7 minutes on each side until fully cooked.
- Let chicken rest for a few minutes, then slice.
- In bowls, layer quinoa, cucumber, tomatoes, red onion, and chicken.
- Top with feta cheese and additional dill if desired.
