A fresh and flavorful Mediterranean orzo pasta salad.


Ingrédients

  • 1 cup orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook orzo pasta according to package instructions. Drain and cool.
  2. In a large bowl, combine cherry tomatoes, cucumber, red onion, olives, feta, and parsley.
  3. Add cooled orzo pasta to the bowl.
  4. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  5. Pour dressing over the salad and toss to combine.
  6. Chill for at least 30 minutes before serving.
