Description
A fresh and flavorful Mediterranean orzo pasta salad.
Ingrédients

- 1 cup orzo pasta
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 cup red onion, finely chopped
- 1/2 cup kalamata olives, pitted and sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Cook orzo pasta according to package instructions. Drain and cool.
- In a large bowl, combine cherry tomatoes, cucumber, red onion, olives, feta, and parsley.
- Add cooled orzo pasta to the bowl.
- In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
- Pour dressing over the salad and toss to combine.
- Chill for at least 30 minutes before serving.
Notes
- Serve chilled or at room temperature.
- Can be made a day in advance.
- Customize with your favorite vegetables.
