A delicious blend of Mediterranean flavors in a quesadilla.
Ingrédients

- 4 whole wheat tortillas
- 1 cup fresh spinach, chopped
- 1/2 cup feta cheese, crumbled
- 1/2 cup mozzarella cheese, shredded
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add chopped spinach and sauté until wilted.
- Remove from heat and stir in feta, mozzarella, oregano, salt, and pepper.
- Place a tortilla in the skillet, add filling, and top with another tortilla.
- Cook until golden brown, then flip and cook the other side.
- Remove from skillet and cut into wedges.
Notes
- Serve with a side of tzatziki sauce.
- You can add grilled chicken or bell peppers for extra flavor.
