Description

A delicious blend of Mediterranean flavors in a quesadilla.


Ingrédients

  • 4 whole wheat tortillas
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup mozzarella cheese, shredded
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add chopped spinach and sauté until wilted.
  3. Remove from heat and stir in feta, mozzarella, oregano, salt, and pepper.
  4. Place a tortilla in the skillet, add filling, and top with another tortilla.
  5. Cook until golden brown, then flip and cook the other side.
  6. Remove from skillet and cut into wedges.

Notes

  • Serve with a side of tzatziki sauce.
  • You can add grilled chicken or bell peppers for extra flavor.
