Description
A hearty dish combining rice and beans with Mediterranean flavors.
Ingrédients

- 1 cup white rice
- 1 can black beans, rinsed and drained
- 1 cup diced tomatoes
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 2 cups vegetable broth
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a pot, heat some oil and sauté onion and garlic until translucent.
- Add the cumin and paprika, cooking for 1 minute.
- Stir in the rice, coating it with the spices.
- Add the diced tomatoes and vegetable broth.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Fold in the black beans and cook for an additional 5 minutes.
- Season with salt and pepper.
- Garnish with fresh parsley before serving.

- Adjust the spices according to your taste.
- Serve warm as a main or side dish.
- Can be made ahead and reheated.
