Ingrédients

- 1 pound shrimp, peeled and deveined
- 2 ripe avocados, diced
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 red onion, finely chopped
- 1/4 cup fresh parsley, chopped

- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- In a bowl, combine shrimp, olive oil, lemon juice, salt, and pepper.
- Heat a skillet over medium heat and cook shrimp until pink, about 3-4 minutes.
- In a large mixing bowl, combine avocados, cherry tomatoes, cucumber, red onion, and parsley.
- Add cooked shrimp to the vegetable mixture.
- Toss gently to combine.
- Serve immediately or chill for later.
