A healthy and flavorful dish featuring zucchini stuffed with a Mediterranean-inspired filling.


Ingrédients

  • 4 medium zucchinis
  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup black olives, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the insides.
  3. In a bowl, mix quinoa, tomatoes, feta, olives, garlic, oregano, olive oil, salt, and pepper.
  4. Stuff the zucchini halves with the mixture.
  5. Place the stuffed zucchinis on a baking dish.
  6. Bake for 25-30 minutes or until zucchinis are tender.
  7. Serve warm.
