  • 1 lb chicken breast, diced
  • 1 cup bell peppers, chopped
  • 1 cup onion, chopped
  • 1 can black beans, rinsed
  • 1 cup corn, frozen or canned
  • 2 cups chicken broth
  • 2 tbsp taco seasoning
  • 1 cup shredded cheese
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced chicken and cook until browned.
  3. Add onion and bell peppers, sauté until soft.
  4. Stir in black beans, corn, and taco seasoning.
  5. Add cooked rice and chicken broth, mix well.
  6. Simmer for 10 minutes, stirring occasionally.
  7. Top with shredded cheese and cover until melted.
