  • 4 cups chicken broth
  • 1 can black beans, drained
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 cups tortilla strips
  • 1 avocado, diced
  • 1 lime, cut into wedges
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, sauté onion and garlic until soft.
  2. Add chicken broth, shredded chicken, black beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper.
  3. Bring the mixture to a boil, then reduce heat and simmer for 20 minutes.
  4. Serve hot, topped with tortilla strips, avocado, cilantro, and lime wedges.
