- 1 cup cornmeal
- 1 cup milk
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup diced tomatoes
- 1 cup shredded cheese
- 1/2 cup diced onion
- 2 eggs
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, mix cornmeal, milk, eggs, and salt.
- Add black beans, corn, diced tomatoes, onion, chili powder, and cumin. Stir well.
- Pour mixture into a greased baking dish.
- Top with shredded cheese.
- Bake for 30-35 minutes or until golden brown.
- Let it cool for a few minutes before serving.
Notes
- Serve with sour cream or salsa.
- Can be made ahead and reheated.
