- 2 lbs chicken breasts
- 1 can black beans, drained
- 1 can corn, drained
- 1 jar salsa
- 1 tsp cumin
- 1 tsp chili powder
- Salt to taste
- 1 cup shredded cheese
- Fresh cilantro for garnish
Instructions
- Place chicken in the crockpot.
- Add black beans, corn, salsa, cumin, chili powder, and salt.
- Stir to combine.
- Cover and cook on low for 6-8 hours or high for 4 hours.
- Once cooked, shred the chicken with two forks.
- Mix in the shredded cheese until melted.
- Garnish with fresh cilantro before serving.
Notes
- Serve with tortillas or rice.
- Store leftovers in the fridge for up to 3 days.
- You can use beef or pork instead of chicken.
