Ingrédients

  • 1 cup tomato juice
  • 1/2 cup ketchup
  • 1/4 cup lime juice
  • 1/4 cup diced red onion
  • 1/4 cup chopped cilantro
  • 1 diced avocado
  • 1 jalapeno, finely chopped
  • Salt to taste

Instructions

  1. Boil the shrimp until pink and cooked, about 3-5 minutes.
  2. Drain and cool the shrimp.
  3. In a bowl, combine tomato juice, ketchup, lime juice, onion, cilantro, jalapeno, and salt.
  4. Add the shrimp to the mixture and stir well.
  5. Gently fold in the avocado.
  6. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • Serve with tortilla chips or on its own.
  • Adjust the spiciness by adding more or less jalapeno.
  • Can be made a day in advance for better flavor.
