Description
A refreshing Mexican shrimp cocktail served with a zesty sauce.
Ingrédients

- 1 lb shrimp, peeled and deveined
- 1 cup tomato juice
- 1/2 cup ketchup
- 1/4 cup lime juice
- 1/4 cup diced red onion
- 1/4 cup chopped cilantro
- 1 diced avocado
- 1 jalapeno, finely chopped
- Salt to taste
Instructions
- Boil the shrimp until pink and cooked, about 3-5 minutes.
- Drain and cool the shrimp.
- In a bowl, combine tomato juice, ketchup, lime juice, onion, cilantro, jalapeno, and salt.
- Add the shrimp to the mixture and stir well.
- Gently fold in the avocado.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Serve with tortilla chips or on its own.
- Adjust the spiciness by adding more or less jalapeno.
- Can be made a day in advance for better flavor.
