Instructions

- Place mini phyllo cups on a baking sheet.
- Bake for 5 minutes until crisp.
- In a bowl, mix ricotta, powdered sugar, and vanilla.
- Fold in chocolate chips.
- Fill each phyllo cup with the ricotta mixture.
- Top with chopped pistachios if desired.
- Chill before serving.
