Delicious mini Christmas cakes perfect for holiday gatherings.
Ingrédients

- 200g mixed dried fruit
- 100g unsalted butter
- 100g brown sugar
- 2 eggs
- 150g all-purpose flour
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 50g chopped nuts
- 50ml orange juice
- 1 tbsp brandy
Instructions
- Preheat your oven to 180°C (350°F).
- In a saucepan, melt the butter and sugar together.
- Add the mixed dried fruit, orange juice, and brandy. Stir well.
- Remove from heat and let it cool slightly.
- In a bowl, beat the eggs, then add to the fruit mixture.
- In another bowl, mix flour, baking powder, cinnamon, and nuts.
- Combine the wet and dry ingredients.
- Pour the batter into mini cake molds.
- Bake for 20-25 minutes until golden brown.
- Let cool before removing from molds.
Notes
- Store in an airtight container.
- Can be decorated with icing if desired.
- These cakes improve in flavor over a few days.
