Ingrédients

  • 100g unsalted butter
  • 100g brown sugar
  • 2 eggs
  • 150g all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 50g chopped nuts
  • 50ml orange juice
  • 1 tbsp brandy

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a saucepan, melt the butter and sugar together.
  3. Add the mixed dried fruit, orange juice, and brandy. Stir well.
  4. Remove from heat and let it cool slightly.
  5. In a bowl, beat the eggs, then add to the fruit mixture.
  6. In another bowl, mix flour, baking powder, cinnamon, and nuts.
  7. Combine the wet and dry ingredients.
  8. Pour the batter into mini cake molds.
  9. Bake for 20-25 minutes until golden brown.
  10. Let cool before removing from molds.
