Ingrédients

  • 1/2 cup of unsalted butter
  • 1/2 cup of sugar
  • 1 large egg
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of baking powder
  • 1/4 teaspoon of salt
  • 1 cup of pumpkin puree
  • 1 teaspoon of ground cinnamon
  • 1/2 teaspoon of nutmeg
  • 1/4 cup of cream cheese
  • 1/4 cup of powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, cream the butter and sugar together.
  3. Add the egg and vanilla, mixing well.
  4. In another bowl, combine flour, baking powder, salt, cinnamon, and nutmeg.
  5. Gradually add the dry ingredients to the wet mixture.
  6. Fold in the pumpkin puree.
  7. Pour the batter into mini muffin tins.
  8. Bake for 15-18 minutes or until a toothpick comes out clean.
  9. Let cool, then mix cream cheese with powdered sugar and top each mini dessert.
