- 4 large potatoes, peeled and diced
- 1 cup sour cream
- 1 cup shredded cheese
- 1/2 cup butter, melted
- 1 packet ranch dressing mix
- 1/2 cup crispy bacon bits
- 1/4 cup green onions, chopped
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Boil the diced potatoes in salted water until tender, about 15 minutes.
- Drain the potatoes and place them in a mixing bowl.
- Add sour cream, melted butter, ranch dressing mix, and half of the cheese. Mix well.
- Stir in bacon bits and green onions. Season with salt and pepper.
- Transfer the mixture to a greased baking dish.
- Top with remaining cheese.
- Bake for 25-30 minutes until bubbly and golden.

- For a spicy kick, add jalapeños.
- Can be made a day ahead and baked before serving.
