Description
Monkey butter is a sweet and creamy spread made from bananas and coconut.

- 2 cups ripe bananas, mashed
- 1 cup granulated sugar
- 1 cup shredded coconut
- 1/4 cup butter
- 1 tablespoon lemon juice
Instructions
- In a saucepan, combine mashed bananas, sugar, and butter.
- Cook over medium heat, stirring constantly, until the mixture thickens.
- Add shredded coconut and lemon juice, stirring to combine.
- Cook for an additional 5 minutes.
- Remove from heat and let cool.
- Transfer to a jar and refrigerate.
Notes
- Use very ripe bananas for best flavor.
- Store in the refrigerator for up to 2 weeks.
- Great as a spread on toast or pancakes.
