A delightful New Year Day dinner featuring a variety of dishes to celebrate the occasion.
Ingrédients

- 1 whole chicken (3–4 lbs)
- 2 cups of rice
- 1 cup of mixed vegetables
- 4 cloves of garlic, minced
- 1 onion, chopped
- 2 tablespoons of olive oil
- 1 tablespoon of soy sauce
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Clean and season the chicken with salt, pepper, and minced garlic.
- Heat olive oil in a large pan and sauté the onion until translucent.
- Add mixed vegetables and cook for 5 minutes.
- Add rice and stir well.
- Transfer the rice mixture into a baking dish and place the chicken on top.
- Drizzle soy sauce over the chicken.
- Cover with foil and bake for 1 hour.
- Remove the foil and bake for an additional 30 minutes until the chicken is golden brown.
- Let it rest for 10 minutes before serving.
Notes
- Adjust seasoning according to your taste.
- Serve with a side salad for a complete meal.
- Leftovers can be stored in the refrigerator for up to 3 days.
