Ingrédients
- Roast Beef – 3 lbs
- Potatoes – 2 lbs
- Carrots – 1 lb
- Onions – 2 medium
- Garlic – 4 cloves
- Olive Oil – 3 tbsp
- Salt – to taste
- Pepper – to taste
- Thyme – 2 tsp
Instructions
- Preheat the oven to 375°F (190°C).
- Season the roast beef with salt, pepper, and thyme.
- Heat olive oil in a pan and sear the beef on all sides.
- Place the beef in a roasting pan.
- Chop the potatoes, carrots, and onions and add them to the pan.
- Add minced garlic to the vegetables.
- Roast in the oven for 1.5 to 2 hours, or until the beef reaches desired doneness.
- Let the beef rest for 10 minutes before slicing.

- Serve with gravy or your choice of sauce.
