Ingrédients

  • 1 cup black-eyed peas
  • 4 cups water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 bay leaf
  • 1 smoked ham hock (optional)

Instructions

  1. Rinse the black-eyed peas under cold water.
  2. In a pot, heat olive oil over medium heat.
  3. Add chopped onion and garlic; sauté until soft.
  4. Add black-eyed peas, water, salt, pepper, bay leaf, and ham hock.
  5. Bring to a boil, then reduce heat to low.
  6. Cover and simmer for 1 to 1.5 hours until peas are tender.
  7. Remove bay leaf and ham hock before serving.

Notes

  • Soaking peas overnight can reduce cooking time.
  • Serve with cornbread for a complete meal.
  • Adjust seasoning to taste.
