Description

A festive dinner to celebrate New Year’s Day with family and friends.


Ingrédients

  • 2 lbs of beef roast
  • 4 cups of mixed vegetables (carrots, potatoes, and green beans)
  • 1 onion, chopped
  • 4 cloves of garlic, minced
  • 2 cups of beef broth
  • 1 tsp of salt
  • 1 tsp of black pepper
  • 2 tbsp of olive oil
  • 1 tbsp of thyme

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Season the beef roast with salt, pepper, and thyme.
  3. Heat olive oil in a large skillet over medium heat.
  4. Sear the beef roast on all sides until browned.
  5. Transfer the roast to a baking dish.
  6. Add chopped onion, garlic, and mixed vegetables around the roast.
  7. Pour beef broth over the roast and vegetables.
  8. Cover with foil and bake for 2 hours.
  9. Remove the foil and bake for an additional 30 minutes.
  10. Let it rest for 10 minutes before slicing and serving.

Notes

  • Serve with crusty bread.
  • Pair with a glass of red wine.
  • Leftovers can be stored in the refrigerator for up to 3 days.
