Description
A festive dinner to celebrate New Year’s Day with family and friends.
Ingrédients

- 2 lbs of beef roast
- 4 cups of mixed vegetables (carrots, potatoes, and green beans)
- 1 onion, chopped
- 4 cloves of garlic, minced
- 2 cups of beef broth
- 1 tsp of salt
- 1 tsp of black pepper
- 2 tbsp of olive oil
- 1 tbsp of thyme
Instructions
- Preheat the oven to 350°F (175°C).
- Season the beef roast with salt, pepper, and thyme.
- Heat olive oil in a large skillet over medium heat.
- Sear the beef roast on all sides until browned.
- Transfer the roast to a baking dish.
- Add chopped onion, garlic, and mixed vegetables around the roast.
- Pour beef broth over the roast and vegetables.
- Cover with foil and bake for 2 hours.
- Remove the foil and bake for an additional 30 minutes.
- Let it rest for 10 minutes before slicing and serving.
Notes
- Serve with crusty bread.
- Pair with a glass of red wine.
- Leftovers can be stored in the refrigerator for up to 3 days.
