Ingrédients

  • 1 whole chicken (about 45 lbs)
  • 2 cups of mixed vegetables (carrots, peas, corn)
  • 1 cup of rice
  • 4 cups of chicken broth
  • 2 tablespoons of olive oil
  • 1 teaspoon of salt
  • 1 teaspoon of pepper
  • 2 cloves of garlic, minced
  • 1 tablespoon of fresh rosemary, chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large pot, heat olive oil over medium heat.
  3. Add garlic and sauté for 1 minute.
  4. Add mixed vegetables and cook for 5 minutes.
  5. Add rice, chicken broth, salt, and pepper. Bring to a boil.
  6. Transfer the mixture to a baking dish.
  7. Place the chicken on top of the rice mixture.
  8. Sprinkle rosemary over the chicken.
  9. Cover with aluminum foil and bake for 1 hour.
  10. Remove foil and bake for another 30 minutes until chicken is golden brown.

Notes

  • Let the chicken rest for 10 minutes before serving.
  • Serve with a side salad for a complete meal.
  • Leftovers can be stored in the refrigerator for up to 3 days.
