Ingrédients

Instructions
- Rinse and soak the black-eyed peas overnight.
- In a pot, heat olive oil over medium heat.
- Add onion, garlic, and green bell pepper; sauté until soft.
- Add cumin and paprika; stir for 1 minute.
- Add soaked black-eyed peas, diced tomatoes, and vegetable broth.
- Bring to a boil, then reduce heat and simmer for 45 minutes.
- Season with salt and pepper.
- Serve hot.
