Ingrédients

  • 2 lbs of beef roast
  • 1 cup of red wine
  • 4 cloves of garlic
  • 2 tablespoons of olive oil
  • 1 tablespoon of rosemary
  • Salt to taste
  • Pepper to taste
  • 4 large potatoes
  • 2 cups of green beans
  • 1 cup of carrots

Instructions

  1. Preheat the oven to 350°F.
  2. Season the beef roast with salt, pepper, and rosemary.
  3. Heat olive oil in a pan and sear the roast on all sides.
  4. Place the roast in a baking dish and add red wine and garlic.
  5. Roast in the oven for 1.5 hours or until desired doneness.
  6. Boil potatoes until tender and mash them.
  7. Steam green beans and carrots until cooked.
  8. Slice the roast and serve with mashed potatoes and vegetables.
