Ingrédients

- 2 lbs of beef roast
- 1 cup of red wine
- 4 cloves of garlic
- 2 tablespoons of olive oil
- 1 tablespoon of rosemary
- Salt to taste
- Pepper to taste
- 4 large potatoes
- 2 cups of green beans
- 1 cup of carrots
Instructions
- Preheat the oven to 350°F.
- Season the beef roast with salt, pepper, and rosemary.
- Heat olive oil in a pan and sear the roast on all sides.
- Place the roast in a baking dish and add red wine and garlic.
- Roast in the oven for 1.5 hours or until desired doneness.
- Boil potatoes until tender and mash them.
- Steam green beans and carrots until cooked.
- Slice the roast and serve with mashed potatoes and vegetables.

- Let the roast rest before slicing.
- You can add other vegetables as desired.
