  • 1 cup red wine
  • 2 cups assorted vegetables (carrots, Brussels sprouts, potatoes)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the beef tenderloin with garlic, olive oil, salt, pepper, rosemary, and thyme.
  3. Sear the beef in a hot skillet for 2-3 minutes on each side.
  4. Transfer the beef to a roasting pan.
  5. Add red wine and vegetables around the beef.
  6. Roast in the oven for 25-30 minutes or until desired doneness.
  7. Let the beef rest for 10 minutes before slicing.
  8. Serve with roasted vegetables.
