Ingrédients

  • 2 lbs of beef tenderloin
  • 4 cloves of garlic, minced
  • 2 tbsp of olive oil
  • 1 tsp of salt
  • 1 tsp of black pepper
  • 1 tbsp of fresh rosemary, chopped
  • 1 tbsp of fresh thyme, chopped
  • 1 cup of red wine
  • 2 cups of mixed vegetables (carrots, green beans, and potatoes)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rub the beef tenderloin with olive oil, garlic, salt, pepper, rosemary, and thyme.
  3. Place the beef in a roasting pan.
  4. Roast in the oven for 25-30 minutes for medium-rare.
  5. While the beef is roasting, sauté the mixed vegetables in olive oil until tender.
  6. Remove the beef from the oven and let it rest for 10 minutes.
  7. Deglaze the roasting pan with red wine, scraping the bottom to incorporate the flavors.
  8. Slice the beef and serve with the vegetables and red wine sauce.
