Description
A festive dinner to celebrate New Year’s Eve with family and friends.
Ingrédients

- 2 lbs of beef tenderloin
- 4 cloves of garlic, minced
- 2 tbsp of olive oil
- 1 tsp of salt
- 1 tsp of black pepper
- 1 tbsp of fresh rosemary, chopped
- 1 tbsp of fresh thyme, chopped
- 1 cup of red wine
- 2 cups of mixed vegetables (carrots, green beans, and potatoes)
Instructions
- Preheat your oven to 400°F (200°C).
- Rub the beef tenderloin with olive oil, garlic, salt, pepper, rosemary, and thyme.
- Place the beef in a roasting pan.
- Roast in the oven for 25-30 minutes for medium-rare.
- While the beef is roasting, sauté the mixed vegetables in olive oil until tender.
- Remove the beef from the oven and let it rest for 10 minutes.
- Deglaze the roasting pan with red wine, scraping the bottom to incorporate the flavors.
- Slice the beef and serve with the vegetables and red wine sauce.
