  • 2 cups of carrots, chopped
  • 2 cups of potatoes, cubed
  • 1 onion, diced
  • 4 cups of beef broth
  • 2 sprigs of rosemary
  • 2 sprigs of thyme

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Season the beef roast with olive oil, salt, and pepper.
  3. In a large skillet, brown the roast on all sides.
  4. Transfer the roast to a roasting pan.
  5. Add carrots, potatoes, and onion around the roast.
  6. Pour beef broth over the roast and vegetables.
  7. Top with rosemary and thyme.
  8. Cover with foil and roast for 2 hours.
  9. Remove foil and roast for an additional 30 minutes until golden brown.
  10. Let rest for 15 minutes before slicing.
