  • 2 cups green beans, trimmed
  • 1 cup cherry tomatoes, halved
  • 1 tbsp balsamic vinegar
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rub the beef tenderloin with olive oil, garlic, salt, and pepper.
  3. Place the beef on a baking sheet.
  4. Roast in the oven for 25-30 minutes or until desired doneness.
  5. Meanwhile, toss green beans and cherry tomatoes with balsamic vinegar and parsley.
  6. Roast the vegetables on a separate baking sheet for 15 minutes.
  7. Let the beef rest for 10 minutes before slicing.
  8. Serve with the roasted vegetables.
