Ingrédients

- 1 lb beef tenderloin
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups green beans, trimmed
- 1 cup cherry tomatoes, halved
- 1 tbsp balsamic vinegar
- 1/4 cup fresh parsley, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- Rub the beef tenderloin with olive oil, garlic, salt, and pepper.
- Place the beef on a baking sheet.
- Roast in the oven for 25-30 minutes or until desired doneness.
- Meanwhile, toss green beans and cherry tomatoes with balsamic vinegar and parsley.
- Roast the vegetables on a separate baking sheet for 15 minutes.
- Let the beef rest for 10 minutes before slicing.
- Serve with the roasted vegetables.
Notes
- Adjust cooking time based on the size of the beef.
- For a vegetarian option, substitute beef with a portobello mushroom.
- Pair with a nice red wine.
