Instructions

  1. Rinse quinoa under cold water.
  2. Cook quinoa in vegetable broth according to package instructions.
  3. Let quinoa cool after cooking.
  4. In a large bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, and parsley.
  5. Add cooled quinoa to the vegetable mixture.
  6. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  7. Pour dressing over the quinoa salad and mix well.
  8. Top with feta cheese before serving.
