Instructions
- Preheat the oven to 350°F (175°C).
- Season the beef roast with salt and pepper.
- Heat olive oil in a large pot and sear the roast on all sides.
- Add chopped carrots, diced potatoes, sliced onion, and minced garlic to the pot.
- Pour in the beef broth.
- Cover and roast in the oven for 2 hours.
- Check the internal temperature of the roast, it should reach 145°F (63°C).
- Let the roast rest for 10 minutes before slicing.
