Instructions

  2. Season the beef roast with salt and pepper.
  3. Heat olive oil in a large pot and sear the roast on all sides.
  4. Add chopped carrots, diced potatoes, sliced onion, and minced garlic to the pot.
  5. Pour in the beef broth.
  6. Cover and roast in the oven for 2 hours.
  7. Check the internal temperature of the roast, it should reach 145°F (63°C).
  8. Let the roast rest for 10 minutes before slicing.
