A festive meal to celebrate the New Year with family and friends.


Ingrédients

  • 2 pounds of beef roast
  • 4 carrots, chopped
  • 3 potatoes, diced
  • 1 onion, chopped
  • 2 cups of beef broth
  • 2 tablespoons of olive oil
  • 1 tablespoon of garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Season the beef roast with salt, pepper, and garlic.
  3. In a large skillet, heat olive oil over medium heat.
  4. Sear the beef roast on all sides until browned.
  5. Transfer the roast to a baking dish.
  6. Add chopped carrots, potatoes, and onion around the roast.
  7. Pour beef broth over the roast and vegetables.
  8. Cover the dish with foil and bake for 2 hours.
  9. Remove the foil and bake for another 30 minutes.
  10. Let the roast rest for 10 minutes before slicing.

Notes

  • Serve with a side salad.
  • Pair with a glass of red wine.
  • Leftovers can be stored in the refrigerator for up to 3 days.
